Chef Allison Davis and Amber are in the kitchen making breakfast bacon wraps.

C1 3 sizzling.

Amber freeman: yes, it is.

Good news for all you bacon lovers, which is pretty much everybody, right?

Allison davis: well, mostly, yeah.

Amber freeman: what are we making?

Allison davis: we are making breakfast bacon roll-ups.

It sounds terrible, right?

Amber freeman: oh, i don't know.

It sounds kind of fancy.

Allison davis: i was being facetious.

Amber freeman: okay.

It's the fumes.

Allison davis: but, yeah.

But we're making these roll- ups.

This is a very simple egg dish.

Again, this is something that the kids could make and another meal prep idea, right?

That you can make up ahead of time.

Amber freeman: because you can just grab them.

Allison davis: then you could grab them and go.

So right now we just have butter in the pan and we're sauteing some onions.

Amber freeman: so- allison davis: we're going to... amber freeman: yes.

Is there a sauteing trick or is it just stirring?

Allison davis: no.

You're just kind of moving them around so that they don't burn in one spot, right?

Amber freeman: it smells good.

Allison davis: yeah.

This is very simple recipe.

So we have some day old bread.

This is like ciabatta or a baguette and we just cut those into cubes.

And so our bread's going to go into our pan with our onions and our butter and just kind of saute a little bit just to kind of toast up the bread, brown it up, and just soak up those flavors.

Amber freeman: never seen bread in a pan like this.

Allison davis: well, i'm just going to teach you all kinds of stuff, amber.

Amber freeman: whole new world.

Allison davis: all right.

And then a little bit of flavor, right?

So we're going to go with a little bit of garlic powder and celery seed.

Amber freeman: interesting.

Allison davis: mm- hmm.

I know.

So just kind of keep working that around.

Again, this is like maybe six ingredients altogether.

Amber freeman: it smells really good.

Allison davis: this is super, super simple.

Amber freeman: and what?

You just want this toasted, you said?

The bread.

Allison davis: yeah, we're just kind of toasting that up.

Softening the bread, you know, just working all those flavors together.

Amber freeman: this is a good trick.

Could you use this in other kind of bread dishes?

Allison davis: yeah, i mean you could actually just sprinkle this right on a salad.

Amber freeman: that's what i was thinking.

It's almost like croutons.

Allison davis: all right.

So at this point all we're going to do is just add in some eggs.

Okay.

So now i want you to stir it pretty hardcore.

Amber freeman: uh oh.

Allison davis: i'm going to take over.

So we're going to work in the eggs and now i'm just going to take it off of the heat.

Amber freeman: does it need to be fast?

Is that why?

Allison davis: well eggs are going to cook really fast.

Amber freeman: okay.

Allison davis: you know, they're going to scramble.

So we're just kind of working those eggs and to kind of let the bread soak all that up.

Amber freeman: which that did happen quickly.

Allison davis: right?

Okay.

So now we're going to let this cool for a second and then i'm going to talk to you about what we're going to do to finish these up.

So i told you these were roll-ups, right?

Amber freeman: yes.

Allison davis: we're going to let this cool, but then we're going to take this bread mixture and kind of form it into like a ball and then we're gonna wrap bacon around it and finish it in the oven.

Amber freeman: that's where the roll... okay, i was a little confused with doing this.

Okay.

Allison davis: yeah.

So this is hot at the moment, but we're going to let this cool and we're going to roll these up and then we're going to show you guys the finished product.

Amber freeman: all right.

Smells like bacon.

Allison davis: sure does.

And as you can see it just cooked up c1 3 beautifully.

Amber freeman: yeah.

Allison davis: we took that bread mixture and i used gloves and just kind of a really packed it in like you would like a meatball, right?

Amber freeman: yes.

Allison davis: and just kind of packed it in and rolled it together.

And then we just wrapped it with this bacon and then these are done.

And so again, this could be another one of those meal prep ideas that you can make up on a sunday and then just have for the kids during the week, you could pop it in the microwave.

Say, "here you go."

Amber freeman: it's an impressive presentation.

Even if you were going to a brunch or having something nice.

Allison davis: yeah, i mean this would be fun for, yeah, just a brunch.

And you could do smaller versions too for like mini bite-size.

Amber freeman: ah, that way you don't have to do... because i was going to ask do you just cut into them or you'd just bite?

Allison davis: i would just go big or go home.

I'd just bite right into them.

Amber freeman: okay.
